CINCINNATI, Jan. 13 /PRNewswire-FirstCall/ -- It was a star-studded evening of Gospel music, family and soul at the Cintas Center located on the campus of Xavier University, which played host to the 11th Annual Allstate Gospel Superfest. The first-ever Bounty Soul Food Cook-Off took place with participating Gospel choirs entering their best soul food, kid-friendly recipes. Three choirs submitted fun dishes which were made available for tasting by attendees and fellow participants at the venue concession stands during the event.

Television host and entrepreneur B. Smith deemed Professor Wilbur Belton & LADWEC Choir of Forestville, MD, offering of 'Pineapple Delight' to be the best of the best. "As a mom first and a chef second, I know how important it is to get kids excited about cooking," said Smith. "Bounty feels the same way and is helping me promote the idea that by preparing and sharing good food, we can get our kids to be more hands-on and explore their creativity in the kitchen."

PINEAPPLE DELIGHT

Professor Wilbur Belton & LADWEC Choir

Ingredients:


    --  1 Large 20oz can of crushed pineapple
    --  1 (10oz) pkg of mini marshmallows
    --  1 pint of whipping cream
    --  1/8 cup of sugar

Optional:


    --  Cinnamon-Honey graham crackers
    --  Cake & cookie sugar crystals (any color)

Directions:

In a large mixing bowl:


    1. Mix 1/8 cup of sugar & whipping cream.
    2. Whip the whipping cream until peaks start to form.
    3. Drain the pineapple & mix or fold into the whipping cream.
    4. Mix in the marshmallows into the mixture until fluffy.

Optional:

Once in your favorite cup, garnish with cake/cookie sugar crystals any color and stick a corner cinnamon graham cracker in your mix. Enjoy!

Film and television stars and co-hosts Vivica A. Fox and Flex Alexander were also on-hand at the event to taste the winning recipe. The 2010 Annual Allstate Gospel Superfest hosted more than 30 national acts for one night of celebration through song and praise.
